Stinging Nettle Quesadillas
We usually start this process by filling an extra-large bowl full of nettle stalks. (Gloves and scissors help to avoid stings)
Carefully, cut leaves off stinging nettle into a large pot. Add water and steam nettle until limp. Remove from heat.
Chop and sauté one large onion. Add Cheese sauce and onions to nettle. Spoon mixture onto tortilla shells and fold in half. Fry on a skillet oiled with olive oil. You can usually fit two at a time. (See Homemade Flour Tortillas recipe below)
Easy Cheesy Sauce
2 1⁄2 cups Non-GMO soy or nutmilk,(not vanilla) OR blend 2 1⁄2 cups water+3/4 cup almonds
1⁄4 to 1⁄2 cup olive oil
1 tsp onion powder
3 Tbsp lemon juice
1⁄2 cup unbleached flour or millet flour
2 tsp nutritional yeast
2 tsp salt
Cook on stovetop until thickened.
Our Favorite Tacos
1 cup water - Add water until the dough holds its shape and can be formed into a ball. Cover and let rest 20 minutes. Divide into balls and roll out thin or press in a tortilla press. Heat skillet. Do not oil skillet. Fry on each side until it begins to brown, Approximately 30 seconds. Remove to place and keep covered with towel until use.
